1 large onion, chopped
2 cloves garlic, minced
1 pound ground beef
1 (28 ounce) can crushed tomatoes
2 (15 ounce) cans kidney beans, drained and rinsed
1 (15 ounce) can diced tomatoes with green chilies, undrained
1 cup beef broth
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
Salt and black pepper to taste
For topping: shredded cheddar cheese, sour cream, chopped fresh cilantro
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more until fragrant.
Add ground beef to the pot, breaking it up with a spoon. Cook until browned, about 8-10 minutes. Drain any excess fat.
Stir in crushed tomatoes, kidney beans, diced tomatoes with green chilies, beef broth, chili powder, cumin, smoked paprika, and cayenne pepper (if using).
Bring the chili to a simmer, then reduce heat to low, cover, and let it cook for at least 30 minutes, or up to 2 hours, stirring occasionally. The longer it simmers, the more the flavors will meld.
Season with salt and black pepper to taste.
Serve hot, topped with shredded cheddar cheese, a dollop of sour cream, and fresh cilantro, if desired.
Notes
For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes.
You can prepare this chili a day in advance and reheat it; the flavors often improve overnight.
