A hearty and nutritious chicken and lentil soup that’s perfect for a comforting meal. Packed with protein and fiber, it’s both filling and healthy.

Ingredients

  • 2 cups chicken breast, cooked and shredded
  • 1 cup lentils, rinsed
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in garlic, cumin, and paprika. Cook for 1 minute.
  4. Add lentils and chicken broth. Bring to a boil.
  5. Reduce heat, cover, and simmer for 25 minutes or until lentils are tender.
  6. Add shredded chicken and simmer for another 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot.

Notes

  • You can use canned lentils to save time.
  • For extra flavor, add a bay leaf while simmering.
  • Store leftovers in an airtight container for up to 3 days.
