Cheesy Buffalo Ranch Chicken Lasagna

This lasagna combines the bold flavors of buffalo chicken with creamy ranch and plenty of cheese, layered between pasta sheets for a comforting and satisfying meal.

  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 1/2 cup buffalo sauce
  • 1/4 cup ranch dressing
  • 1 (15 ounce) container ricotta cheese
  • 1 large egg
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 12 lasagna noodles, cooked and drained
  • 4 cups shredded mozzarella cheese, divided
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup crumbled blue cheese (optional)

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat olive oil in a large skillet over medium heat. Add ground chicken and cook until browned, breaking it up with a spoon. Drain any excess fat.
  3. Stir in buffalo sauce and ranch dressing. Cook for 5 minutes, allowing flavors to meld.
  4. In a medium bowl, combine ricotta cheese, egg, parsley, garlic powder, salt, and pepper.
  5. Spread a thin layer of chicken mixture on the bottom of a 9×13 inch baking dish.
  6. Arrange 3 lasagna noodles over the chicken mixture.
  7. Spread half of the ricotta mixture over the noodles.
  8. Sprinkle with 1.5 cups mozzarella cheese and 1/2 cup cheddar cheese. If using, sprinkle with half of the blue cheese.
  9. Repeat layers: chicken mixture, 3 noodles, remaining ricotta mixture, 1.5 cups mozzarella, remaining cheddar, and remaining blue cheese (if using).
  10. Top with the remaining 6 lasagna noodles, chicken mixture, and the remaining 1 cup mozzarella cheese.
  11. Cover with aluminum foil and bake for 30 minutes.
  12. Remove foil and bake for an additional 15-20 minutes, or until cheese is melted and bubbly and the lasagna is heated through.
  13. Let stand for 10 minutes before serving.

Notes

  • For extra spice, add a pinch of cayenne pepper to the chicken mixture.
  • You can use pre-cooked rotisserie chicken, shredded, instead of ground chicken to save time.
  • If you prefer a milder flavor, reduce the amount of buffalo sauce.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
