This Cheesy Beef and Rice Skillet is a quick and easy one-pan meal perfect for busy weeknights. Ground beef, rice, and vegetables are cooked in a savory tomato sauce, then topped with melted cheese for a comforting and satisfying dish.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (8 ounce) can tomato sauce
  • 2 cups beef broth
  • 1 cup uncooked white rice
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley (for garnish, optional)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat. Drain any excess fat.
  2. Add the chopped onion and minced garlic to the skillet. Cook until the onion is softened, about 5 minutes.
  3. Stir in the diced tomatoes, tomato sauce, beef broth, uncooked rice, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and most of the liquid has been absorbed.
  5. Remove from heat and sprinkle with shredded cheddar cheese. Cover and let stand for 5 minutes, or until the cheese is melted and bubbly.
  6. Garnish with fresh parsley, if desired, and serve hot.

Notes

  • For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning.
  • You can substitute other shredded cheeses like Monterey Jack or a Mexican blend.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
