A hearty and flavorful Cajun potato soup with a spicy kick.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 bell pepper, diced
  • 4 cups chicken or vegetable broth
  • 1 cup milk or unsweetened almond milk
  • 2 tbsp butter or oil
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat butter or oil in a large pot over medium heat.
  2. Add onion, garlic, celery, and bell pepper. Sauté until softened.
  3. Stir in potatoes, Cajun seasoning, and smoked paprika.
  4. Pour in broth and bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Blend half the soup for a creamier texture.
  7. Stir in milk and adjust seasoning.
  8. Garnish with green onions before serving.

  • Adjust Cajun seasoning for preferred spice level.
