A fresh and nutritious twist on the classic Caesar salad, packed with broccoli and kale for added crunch and health benefits.

Ingredients

  • 2 cups chopped kale
  • 1 cup chopped broccoli
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup croutons
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Wash and dry the kale and broccoli thoroughly.
  2. Chop the kale and broccoli into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, and minced garlic to make the dressing.
  4. Toss the kale and broccoli with the dressing in a large bowl.
  5. Add croutons and grated Parmesan cheese.
  6. Season with salt and pepper to taste.
  7. Serve immediately.

Notes

  • Massage the kale with a bit of olive oil to soften it before adding the dressing.
