A creamy and comforting soup made with broccoli and cheddar cheese.

Ingredients

  • 3 cups shredded cheddar cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and garlic, cook until soft.
  3. Stir in flour and cook for 1 minute.
  4. Slowly whisk in vegetable broth and milk.
  5. Add broccoli and simmer until tender.
  6. Stir in cheddar cheese until melted.
