- 2 lbs beef chuck, cubed
- 1 tbsp vegetable oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 lb tomatillos, husked and rinsed
- 2 poblano peppers, roasted and peeled
- 2 jalapeños, seeded
- 1 bunch cilantro
- 1 tsp cumin
- 1 tsp oregano
- 2 cups chicken broth
- Salt to taste
- Brown beef in oil over medium-high heat. Remove from pot.
- Sauté onions and garlic until soft.
- Blend tomatillos, peppers, cilantro, and spices with broth.
- Return beef to pot, add sauce, and simmer for 2 hours.
- Adjust seasoning and serve hot.

- Wear gloves when handling hot peppers
- Tastes better the next day
