Mexican Beef Chile Verde

A flavorful Mexican beef stew with tender meat and a rich green chile sauce.

Ingredients

  • 2 lbs beef chuck, cubed
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 lb tomatillos, husked and rinsed
  • 2 poblano peppers, roasted and peeled
  • 2 jalapeños, seeded
  • 1 bunch cilantro
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 cups chicken broth
  • Salt to taste

Instructions

  1. Brown beef in oil over medium-high heat. Remove from pot.
  2. Sauté onions and garlic until soft.
  3. Blend tomatillos, peppers, cilantro, and spices with broth.
  4. Return beef to pot, add sauce, and simmer for 2 hours.
  5. Adjust seasoning and serve hot.

Notes

  • Wear gloves when handling hot peppers
  • Tastes better the next day
  • Freezes well for up to 3 months
