Beef Nachos Supreme are a flavorful and satisfying dish, perfect for sharing. Crispy tortilla chips are loaded with seasoned ground beef, melted cheese, and a variety of fresh toppings. This recipe offers a homemade version of a classic Mexican-inspired favorite.

  • 1 pound ground beef
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 (15 ounce) can refried beans
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1/2 cup water
  • 1 large bag (about 13 ounces) tortilla chips
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced pickled jalapeños (optional)
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • Sour cream, for serving
  • Salsa, for serving
  • Guacamole, for serving

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, cook ground beef over medium heat until browned and crumbly. Drain off any excess fat.
  3. Stir in taco seasoning mix, refried beans, black beans, diced tomatoes with green chilies, and water. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until heated through and slightly thickened.
  4. Spread a layer of tortilla chips on a large oven-safe platter or baking sheet.
  5. Spoon half of the beef mixture over the chips.
  6. Sprinkle with half of the Monterey Jack cheese and half of the cheddar cheese.
  7. Add another layer of tortilla chips, the remaining beef mixture, and the remaining cheeses.
  8. Bake for 10-15 minutes, or until the cheese is melted and bubbly.
  9. Remove from oven and top with sliced jalapeños (if using), chopped red onion, and fresh cilantro.
  10. Serve immediately with sour cream, salsa, and guacamole on the side.

Notes

  • For extra spice, add a pinch of cayenne pepper to the beef mixture.
  • You can use any type of shredded cheese you prefer.
  • Consider adding other toppings like sliced black olives, corn, or diced avocado.
  • Leftover nachos can be stored in an airtight container in the refrigerator for up to 2 days, though they are best eaten fresh.
