A hearty beef barley soup made with tender beef, vegetables, and barley. Perfect for slow cooking.

  • 1 lb beef stew meat, cubed
  • 1 cup pearl barley
  • 4 cups beef broth
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Brown the beef in a skillet over medium heat.
  2. Add onions, carrots, celery, and garlic. Cook for 5 minutes.
  3. Transfer to a slow cooker with beef broth, barley, thyme, and bay leaf.
  4. Cook on low for 6-8 hours or high for 4 hours.
  5. Remove bay leaf and season with salt and pepper.

Notes

  • For extra flavor, sear the beef before slow cooking.
  • Add more broth if the soup thickens too much.
  • Store leftovers in the fridge for up to 3 days.
