These beef and bean burritos are a quick and satisfying meal, perfect for a busy weeknight. They are packed with flavor and easy to customize.

Ingredients

  • 1 pound ground beef
  • 1 (1 ounce) packet taco seasoning mix
  • 1 (15 ounce) can refried beans
  • 1 cup shredded cheddar cheese
  • 8 flour tortillas (10 inch)
  • 1/2 cup salsa (optional)
  • 1/4 cup sour cream (optional)

Instructions

  1. Cook ground beef in a large skillet over medium heat until browned. Drain any excess fat.
  2. Stir in taco seasoning mix according to package directions.
  3. Warm refried beans in a separate saucepan over low heat, or in the microwave.
  4. Lay out tortillas. Spread a spoonful of refried beans down the center of each tortilla.
  5. Top beans with a spoonful of seasoned ground beef.
  6. Sprinkle with shredded cheddar cheese.
  7. Fold in the sides of the tortilla, then roll up tightly from the bottom.
  8. Serve immediately with salsa and sour cream, if desired.

Notes

  • You can add cooked rice, corn, or diced tomatoes to the filling for extra flavor and texture.
  • These burritos can be made ahead of time and reheated. Wrap them individually in foil and bake at 350°F (175°C) for 15-20 minutes, or microwave until heated through.
  • For a vegetarian option, replace the ground beef with seasoned black beans or a plant-based ground alternative.
