This BBQ Chicken Lasagna is a savory twist on a classic, combining smoky BBQ chicken with creamy cheese and tender lasagna noodles. It’s a comforting and flavorful dish perfect for a family meal or gathering.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1 cup BBQ sauce, plus more for drizzling
  • 15 ounces ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 lasagna noodles, cooked according to package directions
  • 3 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken with 1 cup of BBQ sauce.
  3. In another bowl, mix ricotta cheese, Parmesan cheese, egg, parsley, salt, and pepper.
  4. Spread a thin layer of BBQ sauce on the bottom of a 9×13 inch baking dish.
  5. Place three lasagna noodles over the sauce.
  6. Spread half of the ricotta mixture over the noodles.
  7. Top with half of the BBQ chicken mixture.
  8. Sprinkle with 1 cup of mozzarella cheese.
  9. Repeat layers with three more noodles, the remaining ricotta mixture, the remaining BBQ chicken, and another cup of mozzarella cheese.
  10. Place the final three noodles on top and cover with the remaining 1 cup of mozzarella cheese.
  11. Drizzle with additional BBQ sauce, if desired.
  12. Cover the baking dish with foil and bake for 25 minutes.
  13. Remove foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and lightly browned.
  14. Let stand for 10 minutes before serving.

Notes

  • Cook and shred the chicken ahead of time to save on prep.
  • For a spicier kick, use a hot BBQ sauce.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
