  • 1 1/2 cups mashed ripe bananas (about 34 bananas)
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • For the Cream Cheese Frosting:
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Stir in the mashed bananas, buttermilk, and vanilla extract until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Divide the batter evenly among the prepared cake pans.
  8. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  10. For the Cream Cheese Frosting: In a large bowl, beat the softened cream cheese and butter until smooth.
  11. Gradually add the powdered sugar, beating until well combined.
  12. Stir in the vanilla extract. Add milk, one tablespoon at a time, until the frosting reaches a spreadable consistency.
  13. Once the cake layers are completely cool, frost the cake.
