A delicious layered dish with baked eggs, vegetables, and cheese.

Ingredients

  • 4 eggs
  • 1 cup spinach, chopped
  • 1/2 cup mushrooms, sliced
  • 1/4 cup feta cheese, crumbled
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a pan and sauté spinach and mushrooms until soft.
  3. Grease a baking dish and layer the sautéed vegetables.
  4. Crack eggs over the vegetables.
  5. Sprinkle feta cheese on top.
  6. Bake for 12-15 minutes until eggs are set.
  7. Season with salt and pepper.
  8. Serve warm.
