1 1/2 pounds ground beef (80/20 lean)
1 teaspoon salt
1/2 teaspoon black pepper
6 slices beef bacon
4 slices cheddar cheese
4 hamburger buns
1/4 cup mayonnaise
2 tablespoons ketchup
1 tablespoon mustard
4 lettuce leaves
1 tomato, sliced
1/2 red onion, thinly sliced
4 pickle slices
Instructions
Divide the ground beef into 4 equal portions and form into patties, slightly larger than the buns. Season both sides with salt and pepper.
Cook the beef bacon in a large skillet over medium heat until crispy. Remove the bacon and set aside on a paper towel-lined plate.
In the same skillet, increase the heat to medium-high. Cook the patties for 3-5 minutes per side for medium-rare, or longer for desired doneness.
During the last minute of cooking, place a slice of cheddar cheese on each patty to melt.
While the burgers are cooking, lightly toast the hamburger buns.
In a small bowl, mix together the mayonnaise, ketchup, and mustard to make a special sauce.
Assemble the burgers: spread the special sauce on both halves of the toasted buns. Place a lettuce leaf on the bottom bun, followed by a cheeseburger patty, two slices of crispy beef bacon, tomato slices, red onion, and pickle slices. Top with the other half of the bun.
