A fresh and easy no-cook salsa with avocado, corn, and black beans. Perfect as a dip or side dish.

Ingredients

  • 1 ripe avocado, diced
  • 1 cup corn kernels (fresh or canned)
  • 1 cup black beans, drained and rinsed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cumin

Instructions

  1. Dice the avocado and place it in a bowl.
  2. Add corn, black beans, and red onion to the bowl.
  3. Chop cilantro and add it to the mixture.
  4. Squeeze lime juice over the ingredients.
  5. Season with salt, pepper, and cumin.
  6. Gently toss everything together.
  7. Serve immediately or chill for 30 minutes before serving.

Notes

  • Use fresh corn for the best flavor.
  • If using canned corn, drain it well.
  • For extra spice, add diced jalapeño.
  • Store leftovers in an airtight container for up to 2 days.
