This apple cake is a delightful dessert, perfect for any occasion. It features fresh apples baked into a moist, flavorful cake.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 3 cups peeled, cored, and diced apples (about 3 medium apples)
  • 1/2 cup chopped walnuts, optional

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, cream together granulated sugar, brown sugar, and softened butter until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Alternately add dry ingredients and buttermilk to the wet ingredients, beginning and ending with dry ingredients. Mix until just combined.
  6. Fold in diced apples and chopped walnuts, if using.
  7. Pour batter into the prepared baking pan and spread evenly.
  8. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan on a wire rack before serving.

Notes

  • Granny Smith or Honeycrisp apples work well in this recipe.
  • For extra flavor, sprinkle the top of the cake with a cinnamon-sugar mixture before baking.
  • This cake can be stored at room temperature in an airtight container for up to 3 days.
