Almond croissants (Croissants aux Amandes) are a delightful pastry made from day-old croissants, filled with a rich almond cream, and topped with sliced almonds and powdered sugar. They are a popular French bakery item, perfect for breakfast or a sweet treat.

  • 6 day-old croissants
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1 large egg
  • 1 teaspoon almond extract
  • 1 cup (100g) almond flour
  • 1/4 cup (60ml) whole milk
  • 1/4 cup (60ml) water
  • 2 tablespoons granulated sugar (for syrup)
  • 1/2 cup sliced almonds
  • 2 tablespoons powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare the almond cream: In a medium bowl, cream together the softened butter and 1/2 cup granulated sugar until light and fluffy.
  3. Beat in the egg and almond extract until well combined.
  4. Stir in the almond flour until smooth. Set aside.
  5. Prepare the simple syrup: In a small saucepan, combine the milk, water, and 2 tablespoons granulated sugar. Heat over medium heat, stirring until the sugar dissolves. Bring to a simmer, then remove from heat.
  6. Slice each croissant horizontally, almost all the way through, creating a pocket.
  7. Dip the sliced sides of each croissant into the simple syrup.
  8. Spread a generous amount of almond cream inside each croissant.
  9. Close the croissants and place them on the prepared baking sheet.
  10. Spread a thin layer of almond cream on top of each croissant.
  11. Sprinkle generously with sliced almonds.
  12. Bake for 15-20 minutes, or until golden brown and the almond cream is set.
  13. Remove from oven and let cool slightly on a wire rack.
  14. Dust with powdered sugar before serving.

Notes

  • Day-old croissants work best as they are sturdier and can absorb the syrup without becoming soggy.
  • Adjust the amount of almond extract to your preference.
  • For extra flavor, you can add a tablespoon of rum or amaretto to the simple syrup.
  • Store leftover almond croissants in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 4 days.
